Dandelion Salad Recipe

  • 1/2 c olive oil
  • 1/2 c balsamic vinegar
  • 1/4 c soy sauce
  • 1/4 c maple syrup
  • grated ginger to taste
  • chopped garlic to taste

Mix the marinade and pour over a big bunch of chopped dandelion greens. Marinate 3 hours. So yummy even my little niece and nephews will eat it!

While I haven’t tried this in the salad yet, I just found out that dandelion flowers are a rich source of xanthophyll which is a special carotonoid which helps inhibit the Epstein Barr Virus and keep it dormant. Seems like these would be a yummy and colorful addition to this salad.
